Seafood in a Pinch – Grilled Mussels in Foil

I’ll be honest: I hate seafood. I like fish. I can do calamari. I can handle scallops. But anything else is less than my favorite to say the least. My hubby, however, can eat seafood everyday, at every meal all the time. I suppose, many can say it’s a match made in food heaven, because he gets to keep his grubby hands all over his stinky seafood. Yes, I said stinky; because to me they are stinky, sue me. While I am not a fan of the eating, I am a fan of the cooking. And mussels are one of my favorites to make. Partially because it is so darn easy, and partially because it takes no time. This recipe keeps things simple stupid and healthy all at the same time! If you do not have a grill, a pot on the stove will do just fine.

Seafood in a Pinch – Grilled Mussels in Foil


1 pound mussels

2 scallions, sliced

1 large tomato or a handful of cute little grape tomatoes

3 cloves garlic, minced

juice of 1 lemon

1 cup of dry white wine

healthy pinch of kosher salt

healthy pinch of red pepper flakes

1 handful chopped cilantro

a couple of pieces of crusty bread for dipping


1. Wash and sort the mussels. If they are open and don’t close, when you pinch them shut, then they are a goner and need to be discarded. Remove the “beard” from the mussels and wash thoroughly in cold water.

2. Make a box shape out of foil. Place mussels in foil.

3. Add in all other ingredients except the bread.

4. Toss to combine. Enclose foil “box”.

5. Place on screaming hot grill for 5 minutes or until all mussels have completely popped open.

6. Sprinkle with chopped cilantro and serve with crusty bread.
